Fried Brinjal

I like brinjal. There are so many ways of cooking brinjal. It can be cooked in soup, curry, deep-fried and stir-fried.

Most hawkers stall do not cook brinjal till soft. I love to eat brinjal that is cooked till just-soft, and not too soft.

Depending on the ingredients I have available in the fridge, I can mix brinjal with various other food like dried shrimp, dried fish, mushrooms and spring onion as shown below.

I ran out of garlic yesterday. So this plate of brinjal was cooked with just dried shrimp and brinjal in oyster sauce.


Fried Brinjal with Mushrooms

I had cravings for mushrooms that day when I cooked this dish of brinjal. Mushrooms with oyster sauce is very nice. I had some overnight dried fish, and some spring onion left in the fridge. So I added these ingredients to my dish of brinjal. It looked nice and tasted nice as well. It goes well with porridge or rice.
